  • National Cookie Month: Chocolate and Peanut Butter Chip Cookies

    These chocolate chip cookies are dairy-free, and are VERY delicious!

    Michelle’s Chocolate and Peanut Butter Chip Cookies

    Ingredients:

    2 cups unbleached flour
    2 tsps baking powder
    1/2 tsp.salt
    1 tsp cinnamon
    1/3 bag mini chocolate chips
    1/3 bag peanut butter chips
    1 cup raw sugar
    1/2 cup canola or vegetable oil
    1 teaspoon vanilla
    1/4 cup water

    Directions:

    Preheat oven to 350 and put in baking sheets.

    In a large bowl mix flour, baking powder, salt, cinnamon. Add chips. Make a well in the center and set aside.

    In a medium size bowl mix sugar and oil. Add the vanilla and then add the water. Mix it well.

    Add the wet to the well in the dry. Mix it well but be careful not to overwork it.

    Spoon onto ungreased cookie sheets and gently flatten with a glass. Put them in the oven.

    Bake for 10-12 minutes (you may need to check the bottoms to make sure they are not too brown.)

    The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool.

    Let them sit on the pan for 2 minutes before transferring them to the racks.

    Healthy Snickerdoodles

    Healthy Snickerdoodles

    Makes about two dozen

    • 3/8 cup granulated all natural sugar

    • 1/3 cup brown sugar

    • 1/4 cup organic butter, softened

    • 1/2 teaspoon organic vanilla

    • 1 organic egg white

    • 3/4 cup organic all-purpose flour

    • 1/4 cup organic whole wheat flour

    • 1/2 teaspoon baking powder

    • 1/4 teaspoon ground cinnamon

    • 1/8 teaspoon crushed sea salt

    • 1/8 cup granulated all natural sugar

    • 1/2 teaspoon cinnamon

    • cooking spray
    1. Preheat oven to 400 degrees F.

    2. Combine 3/8 cup sugar, 1/3 cup brown sugar and butter in bowl. Beat in vanilla and egg with a mixer.

    3. In another bowl combine flour, baking power, 1/4 tsp cinnamon and salt. Stir to combine. Add flour mixture to butter mixture. Shape dough into balls.

    4. Combine 1/8 cup granulated sugar and 1/2 tsp cinnamon. Roll balls in sugar mixture and place 2 inches apart on baking sheets coated with cooking spray.  Flatten with a glass.

    5. Bake at 400 degrees for about 6-8 minutes. Remove to cool on wire rack.

O God, our heavenly Father, who loves mankind and are a most merciful and compassionate God, have mercy upon Your servants for whom I humbly pray to You to care for and protect. O God, be their guide and guardian in all their endeavors, lead them in the path of Your truth, and draw them nearer to You, so that they may lead a godly and righteous life in Your love as they do Your will in all things. Give them Your grace, and mercy so that they may be patient, hard working, tireless, devout and charitable. Defend them against the assaults of the enemy, and grant them wisdom and strength to resist all temptation and corruption, and direct them in the way of Salvation, through the goodness of Your Son, our Savior Jesus Christ.
